Pinot Bianco 2007 - Special Offer for Wine Club Only!!

In a small town north of Epernay, France, a young monk named Dom Perignon, peered into a glass of what he thought was still dry white wine and said, "Sacre bleu! I see stars in this glass!" Legend has it that what he mostly likely saw was a cloudy glass of white wine with bubbles that he could not explain. This was the first champagne.


 Unbeknownst to Dom Perignon and the other monks at Abbey of Haut-villers, yeast returns to life in the spring, and a second fermentation begins after the wine is placed into bottles, creating bubbles. After years of experimenting, Champagne became a beautiful wine of incredible quality. But, it didn't always look like that from the start. When Dom Perignon peered in that glass, he probably saw what we at RM refer to as "Champagne Tweener", not quite Champagne, not quite a still wine. 

Our lovely crisp, refreshing dry white wine, did just that. It double fermented in the bottle, threw a little haze and created a little bubbly. Luckily, all of us at RM took sip of the 2007 Pinot Bianco, looked at each other, and unanimously shrugged our shoulders and said "Hey, not bad."
